Tofu stir fry with veggies

INGREDIENTS –

Tofu cubes – 1 cup

Mushrooms sliced – 4-5 no.

Capsicum + carrots – 1/2 cup

Onion cubes 1/2 cup

Oil – 1 tbs

Soy sauce – 2 tsp

Red chilli sauce – 2 tsp

Water or vegetable stock – 1/2 cup

Corn flour – 1 tsp

Roasted peanuts – 1 tbs

Celery chooped – 1 tbsp

Salt & black pepper to taste.

METHOD –

Heat oil in a wok. add all veggies & srit fry for 2 mins.

Add tofu, stir fry for another 1 min.

Add soy sauce, chilli sauce & cook for a min.

Add water or vegetable stock & stir well.

Mix the corn flour with 1/4 cup of water & add to the mixture.

Cook till the sauce thickens.

Add celery,salt & crushed peppercorns & toss.

Stir in roasted peanuts & serve steaming hot.
