Refreshing melon feta salad

This is a wonderful and refreshing salad to relish, especially now when summers are here. We are always looking for something fresh and cool to savor in summers rather than warm or hot food. Juicy melons and crunchy veggies just make it all the more interesting to enjoy on a hot summer evening.

Not just refreshing, this salad is packed with all the summer essential nutrients.
Melons are rich in water and minerals which will replenish the fluid loss happening through sweat. Watermelon is rich in lycopene which is a red colored pigment which is also an antioxidant. It is rich in vitamin A, C and fibers, so it is great for getting healthy, glowing and young looking skin and immunity boosting as well.

Melon seeds used in the salad are rich in good fats that is omega 3 and magnesium which are good for healthy heart. They are also rich in other vitamins and minerals like iron, folate, vitamin E, A, zinc, phoshorus and B complex.

Feta cheese adds up to the saltiness to cut through the sweet taste of melon and also gives a protein boost to the salad. Onion and yellow pepper also adds up to vitamins and phytonutrient content.

Mint and melons have cooling effect on our bodies so it is indeed a perfect choice for summer.

MELON FETA SALAD

Ingredients

  • Watermelon cubes- 2 cup
  • Muskmelon cubes- 1 ½ cup
  • Feta cheese- 3-4 cubes (30g)
  • Yellow bell paper cubed- ½ cup
  • Black olives,sliced – 1 tsp
  • Onion cut into thin strips – 1 small
  • Mint chopped- 2 tbsp
  • Coriander, chopped- for garnishing
  • Toasted melon seeds- 1 tbsp

For dressing-

  • Balsamic vinegar 1 tbsp
  • Olive oil 1 ½
  • Honey 1 tsp
  • Black pepper, salt
  • juice of a half lemon

Method-

  1. Make the salad dressing first, and keep it aside.
  2. Combine salad ingredients. Crumble the feta cheese while adding in the salad.
  3. Drizzle the dressing.
  4. Toss very gently and serve.
