Ingredients
- 1 Avocado
- Cooked or canned Kidney beans 1 cup
- Sweet Corn ½ cup
- Carrot Chunk 1 cup
- Zucchini chunks ½ cup
- English Cucumber ½ cup
- Tri color bell peppers 1 cup
- Olive oil 2 tbsp.
- Juice of 1 lemon
- Salt and paper as per taste
Method
- Cut all the veggies and assemble in a bowl and add in olive oil.
- Scoop out Avocado and cut into small chunks
- Season Avocado with lemon juice and pepper powder.
- Mix Avocado with other veggies
- Add pepper powder if required
- Tare off few mint leaves and toss it all together
- Refreshing Minty beans salad with Avocado is ready.
