Ingredients-
Samwat ke chawal/varai- ¾ cup
Sour curd- 1 cup
Ginger paste- 1 tsp
Green chilli paste- as per taste
Black salt- a pinch
Oil- 2 tbs
Cumin seeds- 1 tsp
Curry leaves- (optional) 5-6 leaves
Coriander leaves- 2 tbs chopped
Grated fresh coconut – 2 tbs
Dry red chilli- 2 no.s
Method-
Roast the varai rice in a pan very lightly for about 3-4 minutes and do not let it brown.
Prepare the batter by mixing rice, black salt, chilli paste, ginger paste and sour curd. Leave the mixture to ferment overnight. it should become a bit bubbly the next day.
Grease a tin with little ghee and transfer the batter into it.
Place the tin into the steamer and cook for 20 minutes.
Cut the dhokla into serving pieces.
To make seasoning:
Heat oil in a pan. Add cumin, red chillies and curry leaves. Now pour it over the dhokla and serve garnished with the coriander and coconut.
