Fresh summer avocado salad

Serves:- 4

Total Time:- 15 min

Ingredients

  • 1 Avocado
  • Cooked or canned Kidney beans 1 cup
  • Sweet Corn ½ cup
  • Carrot Chunk 1 cup
  • Zucchini chunks ½ cup
  • English Cucumber ½ cup
  • Tri color bell peppers 1 cup
  • Olive oil 2 tbsp.
  • Juice of 1 lemon
  • Salt and paper as per taste

Method

  1. Cut all the veggies and assemble in a bowl and add in olive oil.
  2. Scoop out Avocado and cut into small chunks
  3. Season Avocado with lemon juice and pepper powder.
  4. Mix Avocado with other veggies
  5. Add pepper powder if required
  6. Tare off few mint leaves and toss it all together
  7. Refreshing Minty beans salad with Avocado is ready.
