Classic greek salad-low calorie, high fiber and rich in vitamins and minerals.

There are so many salads out there and often we are confused about which one to be tried. There are so many people around us skip their meals and eat only salad or soups to cut down on calories and to lose weight. But they often mistake to consume only vegetables as their main meals rather than a wholesome and fulfilling salad.

Ideally wholesome salad should be rich in fibers, natural water, vitamins, minerals. It also should have good portion of protein and low in carbohydrates and fats. why is it so?

Since you are having that salad as main meal, it should provide a sound nutrition. i.e., it should be balanced with good amounts of proteins, loads of vegetables and healthy fats maybe to use as a dressing.

Here is one such recipe of a ‘Classic Greek Salad’.

Number of serves-2

Ingredients-

Cubed cucumbers- 1 cup

Cubed onion- 1 medium

Cubed capsicum- 1 medium

Halved cherry tomatoes- 1cup

feta cheese- 20-30g

For dressing-

Olive oil- 2 tbsp

Garlic chopped- 3-4 cloves

Balsamic vinegar- 1 1/2 tbsp

Honey- 1 tsp

Lemon juice-1 tsp

mixed herbs, black pepper powder, salt- as per taste.

Method

  1. Make the dressing first with all the ingredients. Mix well and set aside.
  2. In a large salad bowl, combine the vegetables, crumble the feta cheese.
  3. Now drizzle the dressing and mix very gently till all the salad gets coated with dressing.
  4. Serve.
